Dave’s Boathouse will reopen on March 21 after undergoing renovations for nearly a month. The facility halted services on Feb. 27, redirecting employees to the C-Store and Fox Lodge Grill as Rollins prepares to usher in “Dave’s Boathouse by KIVO.”
KIVO is an acronym that stands for kosher, international, vegan, and organic. A kosher diet adheres to the regulations of food preparation and supervision according to Jewish dietary laws.
Director of Dining Services Cristina Cabanilla said, “Rollins Dining has recognized the needs of many of our students. Each day at lunch and dinner, we will offer a complete meal which students can purchase with their CC dining swipes. We will also have a full menu of a la carte options available, similar to the existing Dave’s menu, but with an international flair.”
Dave’s Boathouse will be a non-dairy facility, only using vegetable-based “dairy” products. This means that there will be more options for vegan students at Rollins, including special additions like a falafel bar.
Tess Gordon (‘25) said, “I’m super excited to try all the new vegan options from KIVO. I think it will be a great addition to campus.”
The lower floor of the Cornell Campus Center has undergone other changes over the course of its history. In 2013, the Rollins Student Government Association (SGA) pioneered the initiative to turn what was “Dave’s Down Under” since 1999 into the pub-style Dave’s Boathouse students know today.
Cabanilla said that Rollins Dining Services has recognized that students have different dietary needs and that her team is constantly evolving to meet them.
