Pumpkin Pie Walnut Muffins

Did someone say National Chiffon Cake Day? The Foodimentary, a source for the complete food holiday list, might have, but we are being rebellious and making these Pumpkin Pie Walnut Muffins instead!

30 g Oat Flour

2 tbsp Coconut Flour

1/2 cup Canned Pumpkin Puree

1/2 cup Unsweetened Almond Milk

1 Large Egg White

1/2 tsp Baking Powder

1/2 tsp Vanilla Extract

1/2 tsp Pumpkin Pie Spice

2-3 tbsp Chopped Walnuts


Preheat oven to 350F.

In a mixing bowl, whisk together all the ingredients except the chopped walnuts.

Line a muffin tin with five baking parchment cups.

Pour the batter into the muffin cups, evenly distributing it.

Top with chopped walnuts.

Bake in the oven for about 30-35 minutes.

Let it cool and serve.
